Sage is a unique lemony and minty herb that is European in origin and widely used in American and European dishes. Sage’s long-lasting flavor ensures that it works particularly well in dishes that cook for a long time like casseroles, bean soups, stews, and tomato-based pasta sauces. It is often used to complement rich meats like sausages or duck although it is often used to marinate poultry like Thanksgiving turkey. Using sage for Saltimbocca with pasta is traditional in Italy but it is also great in, or on bread and goes well with cheese.
